Blood Orange + Beet Salad

AFullSizeRenders the temperatures rise over the weekend here in Los Angeles we'll be craving some refreshing and filling. We couldn't resist to share this recipe when we were looking thru our cookbooks, does that look delicious or what? This recipe was actually created during the holiday season by Chef Corey at Flour1, but we want to make it RIGHT NOW. Fresh feta, toasted walnuts and an orange vinaigrette, yum!



So here's what you'll need:


2 lb/910 g beets, a mix of red and gold

1 tsp kosher salt

1 cup/115 g walnut pieces

2 blood oranges (or regular oranges if you cannot find blood oranges)

8 cups/200 g loosely packed baby arugula

8 oz/255 g soft fresh goat cheese

Blood Orange Vinaigrette

1 blood orange (or regular orange)

1 small shallot, finely diced

2 tsp Dijon mustard

2 tsp honey

1 tsp kosher salt

⅛ tsp freshly ground black pepper

3 tbsp sherry vinegar

¼ cup/60 ml extra-virgin olive oil

Special Equipment: rimmed baking sheet, Microplane or other fine-rasp grater


1. Cut the tops of the beets, leaving a little of the stem intact and scrub them well. In a large saucepan sprinkle salt and add water to cover the beets by about 2 inches. Cover and bring to a boil on high heat. Reduce heat to a medium-low and simmer for about 1 hour, or until the beets are tender and can be pierced with a knife. Drain and set aside until the beets are cool enough to be handled. Use a kitchen towel that you don't mind staining to hold the beets. Remove the skins by rubbing the towel firmly against the beets. When the beets are completely cool, cut them into bite-size wedges.

2. Meanwhile, preheat the oven to 350 degrees fahrenheit and place a rack in the center of the oven. Spread the walnuts in a single layer on the baking sheet and toast in the oven, shaking the pan once or twice for even toasting, for 8 to 10 minutes, or until the nut are golden brown, Remove from the oven and let cool.

3. Cut the top and bottom of each orange. Stand one of the oranges on a flat end. Using a sharp paring knife, carve away the rind from the orange, starting from the top and cutting downward and curving inward, until all the rind is gone and you are left with just the fruit. Repeat with the remaining orange. Cut the oranges crossfire into thin slices and set aside for the salad.

4. TO MAKE THE VINAIGRETTE: Working directly over a small bowl, grate the zest from the orange with the Microplane. Cut the orange in half and squeeze the juice into the grated zest. Add the shallot, Dijon mustard, honey, salaam and pepper. Whisk in the vinegar and then slowly whisk in the olive oil until well blended. Taste and adjusting seasoning as preferred.

*The vinaigrette can be made up to 1 week in advance and stored in an airtight container in the fridge. Bring back to room tempter and rewhisk to combine the ingredients before using.

5. Arrange the arugula in a large, shallow bowl. In a medium bowl, toss the beets with 2 to 3 tbsp of the vinaigrette, coating them evenly. Top the arugula with the beets, orange slices, walnuts, and dollops of the goat cheese. Serve the remaining dressing on the side.

Halloween at Rolling Greens!

Time to get Spooky! Holidays are the best reasons to get creative and whip out seasonal decor. Our Halloween displays this year are to die for! (pun intended, but we don't house monster's so you're safe!) We hope you enjoy our bit of fun at our Los Angeles store, enjoy the spirit of the season, and stop by to explore the displays yourself!

Spooky can be pretty, right?! Our Halloween display is crawling with fun accents & cool decor. We adore these glitter skulls; in black they're just the perfect amount of eerie goodness.

Creepy crows in deep black and glittering spiders add texture and dimension to any Halloween display! Prop them on trees and ladders to add height and dimension to your decor!

Glitter is obviously our statement making go-to this year. Not in to black so much? No problem! Ivory glitter & sequin encrusted skulls are contemporary, but still bring in the Halloween spirit. Beaded spiders in oil-like shades can still scare, but are much more unique & colorful!

Adorn your dead tree branches with crows of all sizes; trick or treater's will fear for their lives! Better yet, display some very eerie skeletons in shades of black and ivory, covered in glitter. If their hanging mouths don't cause a scare, we don't know what will!

Ladders of all shapes and sizes create unique and fun display racks. Shades of amber, browns, and striking black create the color palette we love this Halloween! Orange leaves doused in glitter are perfect for keeping around until Fall rolls into Winter!

Itty-bitty pumpkin candles are way too cute to pass up! These are also another great piece to keep around for the season. Feeling a little fiery? These Fuego matches with our new skeleton friend on them are the perfect humorous touch!

Metallic brown votives are fun and super festive! Packages of bones are super versatile, whether creating a rustic vignette or something more on the spooky, gory side. They can also be painted when Winter comes around! Double duty decor is pretty awesome.

There's plenty of pretty options for the not-so-spooky lovers. Shades of purple, pewter, and metallic accents are another way to stay festive this season! We love this display created by our super talented  Visual Team!

Falling into Autumn at Rolling Greens!

Summer is seriously over, although the weather in SoCal refuses to believe it! Nonetheless, our extremely talented Visual team has been hard at work transforming the stores to capture all essences of Autumn. We're falling for this season's beautiful color palettes & cozy decor!  Our Los Angeles & Culver City locations have transformed into unique & beautiful spaces capturing all the warm hues & decor of Fall. Won't you fall into Autumn with us?

Window panes make great backdrops for vignettes in any space. We love the mix of urns, light-colored pumpkins, and florals. It's all very feminine & earthy!

Heading in the direction of a cool color palette? You can definitely still sweep Autumn off it's feet! We love this deep blue color on the walls that grounds the entire space. Deep, dark wood & iron accents give just enough warmth without overpowering the cool side of the color wheel.  Purple, green, and shades of ivory are perfect accent colors! Candles in varying heights are impactful, yet so easy!

Fun rusted red! This is such an inviting color and display. An ornate mirror opens up a smaller space and brings in a bit of light.  Rusty tin containers and stone add an earthy feel.

Mix up neutral walls with pops of color! Bright pumpkins, fall florals, and worn containers definitely do the trick.  Try a monochromatic look with your florals & pumpkins for an innovative twist!

  We love these cherub statues! They make a perfect piece for any garden or worked into a home. You can still work in white to your Fall palette, too. These lanterns are a great piece and will warm up any chilly evening!

The quickest way to fall into Autumn? With the amazing, colorful florals in dreamy Fall hues. Quickly switch out your flowers with tones on the warm side of the color palette. An instant update, that's for sure!

Color of the Season: Persimmon

Pers Inspo Pers Palette

Per·sim·mon: an edible fruit that resembles a large tomato and has very sweet flesh // a fiery, burnt orange.. and our color pick for Summer! The season is rapidly approaching, as is the weather here in California; 90-95 degrees already! We're lusting over innovative, bold color palettes and are hooked on this statement hue. 

Pair Persimmon with brights (like we did above) for a maximum Summer ambience, or if you're still afraid of taking the jump to an extremely bold palette, we suggest pairing with a light sea foam, tickled blush, and grey-beige. Whether you decide to paint an entire accent wall this amazing color, or just add a soap bar to your bath in this hue, we're giving you two thumbs up for incorporating Persimmon!

A Whisper of Chocolate & Orange

"A good scone is hard to find, even in a food capital like New York City. Many tend to be too cakey or too dry, and almost all of them are oversized. Not these scones, folks. They have a moist, crumbly texture, can be eaten in four or five bites, and come with a bonus-- they're dotted with bittersweet chocolate & a whisper of orange."

We were already drooling over the decadent picture of these Orange-Scented Chocolate Chunk Scones; after taking a closer look at the recipe, things got pretty serious and we had to share! We thought these would be great with a chai latte on a lovely morning, or better yet, bake up  a batch up  for your Mom this Mother's day (which is right around the corner!)
